Super easy...
{don't have to break out the mixer or peel apples},
super scrumptious,
super fallish recipe...
Fresh Apple Walnut Bundt Cake
Ingredients:
2 cups sugar
3 cups all-purpose flour
1 tsp each baking soda, cinnamon (I use cinnamon sugar) & salt
1 1/2 cups oil
3 large eggs
1 tsp vanilla extract
3 cups chopped unpeeled apples
1 cup chopped walnuts
1- Heat oven to 350 degrees.
Grease, but don't flour, a 10 or 12 cup bundt pan.
2- Mix sugar, flour, baking soda, cinnamon and salt in a large bowl until blended.
Stir in oil, eggs and vanilla, then apples and nuts.
3- Bake 1 hour, or until a wooden pick inserted in cake comes out clean.
{Mine bakes in about 50-55 minutes}
Cool 10 minutes in pan on a wire rack before inverting on rack to cool completely.
4- Optional, may serve with sweetened whipped cream.

What a sweet memory you have posted for me.
ReplyDeleteI used to make that very recipe with my grandmother. we'd go up to the virginia line and buy several bushels of apples.. we cut and freeze some and make our cakes with the ripest to eat and to share. lots of folks got a cake for Christmas and were always pleased.
I've made several since she's been gone but mine dont have the same Magic, she added.
