What to do when you have a beloved aunt convalescing at home,
after a lengthy hospital and rehab stay, who has little appetite?
How about making one of her favorite cakes, strawberry, to temp those taste buds!
We're a couple of months out from fresh strawberry season.
But I happen to have a delicious, and easy, semi-scratch recipe that uses frozen strawberries.
The recipe, along with my other favorites and old stand-bys,
are keep in an old blue binder.
The collection of recipes consists of cut-outs from magazines, prints from the internet,
and those given by friends, and even Mr. Rambling's patients.
Some are passed-down family recipes...
...and many have personal notes, including denoting family preferences.
For years, I used a recipe box.
But because some of the recipes wouldn't fit,
and I can now put them in plastic sleeves, protecting them as I use them,
the binder works well!
The Semi-Scratch Strawberry Cake Recipe originated from a magazine.
Unsure of the exact source, I apologize for not giving credit were deserved.

Just a tidbit...
The recipe calls for pureed strawberries.
I don't have a food processor, so after the strawberries completely thawed,
I mashed them with an old-fashion masher, and then threw them in the mixer.
...my version of pureed.
