and it's much too hot and humid for baking
in a warm kitchen heated by an oven, wouldn't you say?
So how about an easy dessert that is light
and doesn't require any baking?

And may I add, it is so delectably de-liiii-ci-ousss!!!
Cherry Cheese Trifle
(Makes 12 to 15 Servings)
1 (8 oz) pkg cream cheese, softened
1 (14 oz) can of sweetened condensed milk
1 (12 oz) container frozen whipped topping, thawed
{I use the largest tub of cool whip}
1 (13 oz) prepared angel food cake
2 (21 oz) cans cherry pie filling
sliced almonds or pecans (optional)
In a medium bowl, combine cream cheese and sweetened condensed milk. Beat with an electric mixer until smooth. Stir in 2/3 of whipped topping; set aside. Tear angel food cake into 1" pieces. Place 1/3 of cake pieces in bottom of a trifle bowl. Spoon 1/3 of cream cheese filling over cake, and top with 1/3 of pie filling. Repeat layers twice more. Spread remaining whipped topping over top of triffle. Garnish with additional pie filling and sliced almonds or pecans, if desired.

Hmmmm...that sounds wonderful...I am thinking blueberries or lemon, too. I can not imagine living in that heat...misery. We had 90s and humidity for five days and it nearly did me in. It is very temperate here today, but probably not warm enough for a swim.
