Hope everyone had a wonderful Easter!
We did! On Friday Evening, we ate out with Kevin's family,
and on Sunday, after an amazing Worship Service celebrating Resurrection Day,
I hosted my side of the family at our home for lunch.
Ashley was home for a long weekend, and we had nieces and nephews around for four days.
...fun, fun!
I love cooking for the family! And one simple recipe I fixed this weekend,
was a "5 Cup Fruit Salad," also known as Ambrosia Salad.
This salad has been around forever, but I never tire of the refreshing treat!
Doesn't "5 Cup Salad," look so Spring'y!
A simple tip...
The recipe calls for 1 cup each of mandarin oranges and pineapple chunks.
I don't measure an exact cup, but just go with a 15 oz. can of mandarin oranges and a 20 oz. can of pineapple tidbits. Don't know how close they come to a cup once drained, but the amount works well.
My daughter, Ashley, made Peeps Cupcakes and I threw Nest Haystacks together.
Haystacks were a favorite of our family when I was growing up, mom made them often.
Never thought of making them into nest until, of course, I saw them on Pinterest! :)
Haystacks...
1 bag of Butterscotch Morsels
1 bag of Chinese Chow Mein Noodles
Melt Butterscotch morsels in the microwave, mix in noodles, and form nests. Add candy eggs.
(Tip: Make in small quantities, so that the mixture doesn't try too much before you make all the nests.)
