Enjoy Pecan Pie by ReMOOving the Carbs

I typically think of pecan pie as a southern staple for Thanksgiving,
but I learned that yesterday was National Pecan Pie Day!
I'm okay with enjoying pecan pie most any day!

After googling low-carb pecan pie recipes,
 I gathered the ingredients for one I came across on Food(dot)com.



Assembled everything, looking good so far... ready for the oven.

I opted for a store bought regular crust, making my pie version semi-low carb.
 "wink, wink"
I've tried the almond flour crust with other low-carb desserts, and wasn't a big fan,
...just a personal preference.











The recipe didn't call for Cool Whip, but I added a dab,
not adding but a few more carbs.



The taste test...
The pie was really tasty, though not nearly as sweet as the original.
The texture was different, more spongy, not syrupy, which I kind of missed.
And the maple flavor was very dominant.
But overall, it was good alternative to satisfy one's sweet tooth,
minus much of the guilt!

Update: The pie was actually better after it sat overnight!
Still not just like the original, :) ...but the maple flavor wasn't as strong.



So, celebrating National Pecan Day 
by reMOOving (most of) the carbs, wasn't bad at all!

  5. I love pecan pie and I can't wait to try this recipe. Thanks for sharing. Also, thanks for reminding me to use unusual containers for flowers! I have the same cow creamer and it is the perfect size to bring a small pop of color to a small table. Heading out to the garden right now!
