Low Carb Hamburger Casserole Even Your Kids Will Like

One of the hardest things about being on a diet,
other than being on a diet... and sticking to it...
is being on one, and having to cook different meals for those 
in your household who aren't.

And let's face it,
 most kids are picky enough.
How many want to join us as we count calories, fat grams, or carbs?

I came across this recipe, a low carb Hamburger Casserole,
that is quick, easy to make, tasty, ...and your kids will probably really like it.
My kids do!

So let's get this recipe started... first you brown the beef in butter.




Add the ingredients that will be listed farther down in the post,
 along with more detailed instructions.
Put in an oven safe dish, top with shredded cheese...




Broil until the cheese melts and starts to brown.










We eat the Hamburger Casserole with a few vegetables on the side,
but the original recipe suggests pairing them mock (cauliflower) mashed potatoes.

I do occasionally fix mock mashed potatoes, and Mr. Ramblings and I both like them.
But the first time I fixed them, I attempted to pass them off as the real thing
to my children, and they had a less than favorable reaction!  ha!
